"A guest sees the room. The film goes past it — into the kitchen, the prep station, the dish pit, the moments that happen once and happen a thousand times. Same recipe, different plate, every service."






Overview: A restaurant shows customers one layer and keeps the rest — the kitchen, the hands, the pace of it — behind a door most cameras never get past. This series gets past it. Not through technique but through time spent, until the people at the grill stopped performing for the lens. The walk runs front to back — the front door, the dining floor, the bar, the pass, the hands at the grill, the dishwashers, the back — in the order trust opened it up. Black and white gives up the easy appeal of food in color; what's left is tone, which is what gelatin silver holds most of.
